The California Halibut is a true West Coast luxury. Our halibut are caught right off the coast and around the islands near Orange County. The fish range in size from 6lbs - 30lbs so fillets will be cut into 1lb portions.
Halibut is a lean fish with a mild, sweet flavor. Fillets have large, white flakes with a firm and tender texture because of its rich oil content, which also makes them a great choice for home cooks with a little less experience as they do not dry out easily. Similar to Cod but with a slightly sweeter flavor and denser texture.
