Whole - Gutted & Gilled- These Rockfish are caught right off the coast of Los Angeles outside Catalina Island. Each Rockfish is humanely dispatched using Ike Jime and Shinkeijime, leading to a significantly longer shelf life, and improved flavor and texture.
For those that utilize the whole fish, our whole Pacific Rockfish is of incredible value. Use the fillets for a baja style fish taco dinner and save the rest of the fish to make mouthwatering fish stock for tomorrow's Rockfish stew. Just make sure to keep the collars for a baked appetizer or snack!
