Sand Dabs are a small, flatfish found all along the West Coast and have been voted the most sustainable fish choice from the Pacific. They pack quite the flavorful punch despite their small size. Most of the time Sand Dabs are prepared whole, skin on, either fried or pan seared, which allows the skin to crisp up resembling the taste of french fries!
