Sand Dab Whole

Sand Dabs are a small, flatfish found along the Souther California coast and have been voted the most sustainable fish choice from the Pacific. They pack quite the falvorful punch despite their small size, especailly with one common yet unique way of preparation. Much of the time, Sand Dabs are prepared in a manner where the head and innards are removed, leaves all bones and even fins the fish then being fried whole. The bones can then be easily removed in one swift motion and it allows the consumer to enjoy the tender meat and the crispy skin , which many compare to the taste of french fries.
